Now that we’re not only fans of streusel pumpkin sweet potato boats, we’re now wondering how we managed to waste so many years not being on the sweet potato boat. Brown sugar? bacon? Quest Pumpkin Pie Bar? We are… on board.

Ingredients

Sweet Potato Boats Pumpkin STREUSEL

method

  1. Preheat the oven to 400 F and prepare a baking tray with tin foil.
  2. Use a fork to stab the potatoes, place them on a plate and in the microwave for 4-5 minutes, then soft.
  3. Once cooked, let it cool.
  4. Cut the potatoes in half lengthwise, then pour the filling.
  5. Discard 2 skins, you will have 6 skins left.
  6. In a mixing bowl, mix sweet potato filling, butter, brown sugar, protein, cinnamon, salt, and bacon pieces together until combined. Fill the crust with the mixture and bake for 20-25 minutes.
  7. Meanwhile, chop the taskbar into small pieces and put them in a food processor and blend until small crumbs form.
  8. Sprinkle crumbs over the boats as soon as they come out of the oven.
  9. Sprinkle with cinnamon and serve.
