Ingredients

White chocolate with pistachios

  • 2 Quest White Chocolate Raspberry
  • 1 scoop Quest vanilla protein powder
  • 2 tablespoons of pistachios without the shell
  • 2.5 ounces creamy Greek yogurt cheese, room temperature
  • 1/2 cup sugar-free white chocolate chips
  • 1 teaspoon coconut oil
  • 1 tablespoon crushed pistachios, to garnish

method

  1. Preheat oven to 350 degrees Fahrenheit and prepare a parchment paper baking tray.
  2. Cut Quest boards into small pieces and place them on a baking tray.
  3. Bake for 5 minutes and golden brown. Let the pieces cool completely.
  4. Place the Quest Bar bits, protein powder, pistachios and 1 tablespoon of white chocolate chips in a food processor or blender and blend until well combined.
  5. Add cream cheese and mix until moist crumbs form and stick together.
  6. Separate the mixture into 12 equal-sized balls and place them in a frying pan lined with parchment paper.
  7. Cool while melting and preparing white chocolate.
  8. Melt white chocolate chips and coconut oil together until smooth for 15 seconds in the microwave, stirring between each.
  9. Dip each truffle in the chocolate until completely covered with a fork.
  10. Let the excess chocolate drip, then put the truffles back on the baking tray.
  11. Cover with crushed pistachios and let cool until chocolate is solid.
